Noma built New Nordic Cuisine from a Christianshavn warehouse that spent 200 years trading Greenlandic dry fish, salted herring, and whale oil. Founded by René Redzepi and Claus Meyer in 2003, the restaurant moved to Refshalevej 96 in 2018 and now operates as a food innovation lab with periodic pop-up residencies.
